About Roly’s English Fudge

Roly's English FudgeIf you haven’t tasted traditional English Fudge, you are in for a treat. The recipe originated in England’s West Country – Devon and neighboring Cornwall, where many Brits go on holiday and is home of the “English Riviera”. The dramatic coastline and charming villages are as captivating as is the tranquility of the moors that dominate the area. Devon produces incredibly rich butter and cream, and is famous for it’s clotted cream that stars in that wonderful afternoon indulgence – Cream Tea. It’s worth the trip to England just to taste that marvelous clotted cream on a warm scone. While you are there visit one of the Roly’s Fudge shops in the area.

It is from this tradition of flavor that our fudge is born. It is not even remotely similar to that industrial cake icing (cooked in electric vats and left to harden in aluminum pans) that is passed off as “homemade” fudge here in the U.S. That concoction is built around corn syrup, which is cheap and easy to work with but makes the end product (we refuse to call it fudge!) sticky, mushy, too sweet and intolerant of the slightest heat. There are lots of reasons to avoid anything made with corn syrup, and we could launch into that, but just believe us when we say we won’t let it anywhere near our fudge.

Roly’s English Fudge is created in small batches right in our shop in beautiful Portsmouth, NH (the only Roly’s in North America), poured out on a polished granite slab and worked by hand until it can be cut into individual portions. And as we say around here – it’s all about taste! The fudge melts in you mouth while having an interesting crumbly texture that is something you can bite into without having it stick to you teeth or fingers.

And the different flavors are positively fun!! An American expat living in Devon discovered Roly’s fudge nine years ago. On a recent trip to England we met her in the Totnes shop where she informed us “You simply must tell everyone that it’s more than just chocolate!”. Of course there is a wonderful chocolate made only with imported Cadbury cocoa, and Roly’s Original – the most popular in England by far. It has a vanilla, naturally caramel flavor and is perhaps reminiscent of the fudge your mother or grandmother used to make, sometimes called penuche.
